  • Plain Flour (200g)
  • Egg (1)
  • Salt (1 teaspoon)
  • Bryndza cheese (250g)
  • Bacon (200g)
  • Chives (Garnish)

  1. Prepare the Dough
    Grate potatoes finely using a hand grater or food processor. Combine the grated potatoes with plain flour, egg, and salt in a bowl, mixing until a thick, sticky dough forms.

  2. Cook the Dumplings
    Boil a large pot of salted water. Use a halušky maker to press the dough into the boiling water, or scrape small pieces with a knife from a tilted cutting board. Cook until the dumplings float to the surface, about 2-3 minutes, then remove with a slotted spoon and set aside.

  3. Prepare the Toppings
    Chop bacon into small pieces and fry in a skillet over medium heat until crispy. If you don't have bryndza cheese, mix crumbled feta with a dollop of sour cream to mimic its flavor.

  4. Assemble the Dish
    Toss the cooked dumplings with bryndza cheese until well-coated and creamy. Top with crispy bacon and its drippings. Garnish with chives for added color and flavor.
