- In a mixing bowl, cream together 150g of butter and 70g of sugar until light and fluffy. Next, incorporate 1 egg and 25g of honey, mixing thoroughly.
- Gradually add 175g of all-purpose flour, 80g of cornstarch, 30g of unsweetened cocoa, 1 teaspoon of baking powder, and 1 teaspoon of baking soda. Blend until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or overnight.
- Preheat your oven to 200°C (about 392°F) and line two baking sheets with parchment paper.
- Divide the chilled dough into two portions, keeping one in the fridge. Roll out the other half to about 2mm thick and cut out round cookies using a 5-6 cm cookie cutter or a glass. You should yield approximately 30-40 cookies.
- Bake each tray of cookies for 8-10 minutes, then allow them to cool completely.
- For the filling, take two cookies of the same size and spread about 1 teaspoon of dulce de leche on the bottom of one cookie before topping with the other to create a sandwich.
- For the chocolate coating, chop 500g of semi-sweet chocolate and melt it with 100g of butter and the zest of 1 orange over low heat. Dip each cookie sandwich into the melted chocolate and place them on parchment paper to cool before serving.
