Ingredients

  • Butter (150g)
  • Sugar (70g)
  • Egg (1)
  • Honey (25g)
  • All-purpose flour (175g)
  • Cornstarch (80g)
  • Unsweetened cocoa powder (30g)
  • Baking powder (1 tsp)
  • Baking soda (1 tsp)
  • Dulce de leche (400g)
  • Semi-sweet chocolate (500g)
  • Butter (100g)
  • Orange zest (From 1 orange)

Instructions

Steps

  1. In a mixing bowl, cream together 150g of butter and 70g of sugar until light and fluffy. Next, incorporate 1 egg and 25g of honey, mixing thoroughly.
  2. Gradually add 175g of all-purpose flour, 80g of cornstarch, 30g of unsweetened cocoa, 1 teaspoon of baking powder, and 1 teaspoon of baking soda. Blend until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or overnight.
  3. Preheat your oven to 200°C (about 392°F) and line two baking sheets with parchment paper.
  4. Divide the chilled dough into two portions, keeping one in the fridge. Roll out the other half to about 2mm thick and cut out round cookies using a 5-6 cm cookie cutter or a glass. You should yield approximately 30-40 cookies.
  5. Bake each tray of cookies for 8-10 minutes, then allow them to cool completely.
  6. For the filling, take two cookies of the same size and spread about 1 teaspoon of dulce de leche on the bottom of one cookie before topping with the other to create a sandwich.
  7. For the chocolate coating, chop 500g of semi-sweet chocolate and melt it with 100g of butter and the zest of 1 orange over low heat. Dip each cookie sandwich into the melted chocolate and place them on parchment paper to cool before serving.
