Ingredients
- Flour (2 cups)
- Buttermilk (2 cups)
- Egg (3)
- Granulated Sugar (2 tbsp)
- Salt (1 tsp)
- Baking Powder (1 tsp)
- Cardamom (1/2 tsp)
- Butter (For greasing)
- Powdered Sugar (For sprinkling)
- Raspberry Jam (1 scoop)
Instructions
Steps
- In a large bowl, combine flour, salt, sugar, baking powder, and cardamom.
- Separate the eggs, adding the yolks to the flour mixture. Mix in buttermilk and whisk until the batter is smooth. Cover and let it chill in the refrigerator for about 30 minutes.
- Beat the egg whites using a mixer until stiff peaks form, then gently fold them into the batter.
- Preheat a pan over medium heat. Once hot, grease the pan with butter and fill each æbleskiver hole nearly full with batter.
- Once the edges of the batter start to set, use a knitting needle or skewer to gently turn each æbleskiver about 1/4 turn. Continue turning until they form round spheres and are golden brown all around.
- Remove the æbleskiver from the pan and serve them warm, dusted with powdered sugar and a scoop of raspberry jam.
