  • Eggs (4)
  • Sugar (200g)
  • Self-raising flour (200g)
  • Melted butter (200g)
  • Vanilla extract (1 tsp)
  • Ground cinnamon (1 tsp)
  • Apples (3)
  • Salt (Pinch)
  • Ground sugar (Sprinkling)

  1. Preheat your oven to 180°C (350°F). Prepare a cake pan by greasing it and lining it with baking paper.
  2. In a large mixing bowl, combine 4 eggs and 200g sugar. Beat the mixture until it becomes fluffy and triples in volume.
  3. Sift 200g self-raising flour into the egg mixture and gently fold it in to retain as much air as possible.
  4. Add 200g melted butter (cooled slightly), mixing until fully incorporated.
  5. Stir in 1 tsp vanilla extract, 1 tsp ground cinnamon, and a pinch of salt.
  6. Chop 3 apples and fold them into the batter, ensuring they are evenly distributed. Optionally, roll the apple pieces in some extra cinnamon.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Arrange the apple slices on top of the batter and press down lightly. Optionally, sprinkle with some almond shavings.
  9. Bake in the preheated oven for about 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  11. Once cooled, dust the cake with ground sugar before serving.
