- Preheat your oven to 180°C (350°F). Prepare a cake pan by greasing it and lining it with baking paper.
- In a large mixing bowl, combine 4 eggs and 200g sugar. Beat the mixture until it becomes fluffy and triples in volume.
- Sift 200g self-raising flour into the egg mixture and gently fold it in to retain as much air as possible.
- Add 200g melted butter (cooled slightly), mixing until fully incorporated.
- Stir in 1 tsp vanilla extract, 1 tsp ground cinnamon, and a pinch of salt.
- Chop 3 apples and fold them into the batter, ensuring they are evenly distributed. Optionally, roll the apple pieces in some extra cinnamon.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Arrange the apple slices on top of the batter and press down lightly. Optionally, sprinkle with some almond shavings.
- Bake in the preheated oven for about 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
- Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust the cake with ground sugar before serving.
