Ingredients

  • Egg (1)
  • Butter (1 cup)
  • Sugar (1 cup)
  • Molasses (1/2 cup)
  • Vanilla extract (1 tsp)
  • Baking powder (2 tsp)
  • Water (3 tbsp)
  • Cinnamon (1 tsp)
  • Salt (2 tsp)
  • All-purpose flour (4 cups)
  • Jam (2 cups)

  1. Preheat your oven to 350 °F (180 °C) and prepare a large baking sheet by lining it with parchment paper.
  2. In a stand mixer fitted with a paddle attachment, cream together butter, sugar, and egg until well combined. Add molasses and vanilla, mixing until smooth.
  3. In a separate bowl, mix baking soda with water and then add this to the mixture, blending for another minute.
  4. In another bowl, whisk together baking powder, cinnamon, flour, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined. Make sure to scrape the sides of the bowl to incorporate all ingredients. The dough should be pliable and easy to shape.
  5. Using a small spoon, portion the dough into balls and place them on the prepared baking sheet. Flatten each ball into discs with a floured glass or your slightly damp palm.
  6. Bake the cookies in the preheated oven for 10-12 minutes. Once baked, remove them from the oven and let them cool for at least 10 minutes.
  7. After cooling, create cookie sandwiches by spreading about two teaspoons of your preferred jam between two cookies. Enjoy your delicious jam jam cookies with a nice cup of tea!
