Ingredients

  • Almonds (3 cups)
  • Powdered Sugar (6 cups)
  • Egg White (4)
  • Lemon Juice (1/2 teaspoon)

  1. Begin by grinding almonds using an almond grinder or food processor until fine.
  2. In a large bowl, combine almonds and powdered sugar. Add three of the egg whites and mix by hand until the dough forms a ball. Wrap it in plastic wrap and refrigerate for at least an hour, or preferably overnight.
  3. Prepare the kransekake molds by greasing them well and dusting with semolina, flour, or breadcrumbs.
  4. Preheat your oven to 210°C (410°F).
  5. Divide the chilled dough into six portions. Gradually mix in the remaining egg white and knead until the dough can be rolled into sausages the thickness of your finger.
  6. Fill the molds with the dough sausages, pinching the ends to form rings.
  7. Place the filled molds on a baking sheet and bake in the center of the oven for 10-12 minutes, or until the tops turn golden brown.
