  • Egg (3 large)
  • Sugar (3/4 cup)
  • Butter (2/3 cup)
  • Flour (1 1/4 cups)
  • Cardamom (1 teaspoon)
  • Nutmeg (1 pinch)
  • Salt (1/2 teaspoon)
  • Water (splash)

  1. In a mixing bowl, whisk together 3 large eggs and 3/4 cup sugar until the mixture becomes thick.
  2. Melt 2/3 cup butter and allow it to cool slightly before adding it to the egg mixture.
  3. Stir in 1 teaspoon cardamom and a pinch of nutmeg, then gradually incorporate 1 1/4 cups flour while mixing to prevent lumps from forming.
  4. Let the batter rest for a minimum of 30 minutes to enhance the texture of the krumkaker.
  5. Spoon approximately one heaping tablespoon of batter onto the krumkake iron and bake. If the batter appears too thick, add a splash of water.
  6. While the krumkake is still warm, shape it using a wooden krumkake roller or over a cup. If using a cup, make the cookies a bit thicker. Since the krumkaker harden quickly, place them on the roller or cup until you are ready to shape the next one.
  7. Once fully cooled, store the krumkaker in a metal or glass tin lined with paper towels at the bottom. They can also be frozen for later enjoyment!
