- Rice Noodles (200 g)
- Sesame Seed Oil (15 ml)
- Egg (2 beaten)
- Red Chilli (1 chopped)
- Ginger (3 cm piece)
- Prawns (450 g)
- Soy Sauce (15 ml)
- Coriander (1 bunch)
- Mint (handful)
- Lime (1 zest and juice)
- Peanuts (handful)

- Prepare the rice noodles according to the package instructions, then drain and set them aside. In a large frying pan, heat sesame seed oil over medium heat and pour in the beaten eggs. Swirl the eggs around to form a thin omelette, cooking for 1-2 minutes on one side before flipping and cooking for an additional minute. Remove the omelette from the pan and slice it into thin strips.
- In the same pan, add the chopped red chilli and ginger; sauté for 1-2 minutes. Next, add the noodles, prawns, and sliced omelette. Drizzle in the soy sauce and stir-fry everything together for another minute. Finally, mix in the chopped coriander and mint, and pour over the lime juice and zest. Top with chopped peanuts before serving.
