- In a large saucepan, melt 1/4 cup of butter over medium-high heat.
- Add 2 pounds of ground beef, seasoning it with 2 teaspoons of salt, 1/2 teaspoon of allspice, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of black pepper. Cook, stirring occasionally, until the beef is browned and crumbled, which should take about 7 to 10 minutes.
- Pour in 5 cups of chicken stock and 2 cups of rice into the beef mixture, bringing it to a boil.
- Lower the heat, cover the saucepan, and let it simmer until the liquid is absorbed, approximately 20 minutes.
- While the rice is cooking, melt 2 tablespoons of butter in a small skillet over medium heat. Add 1/2 cup of pine nuts and cook, stirring frequently, until they are lightly browned, about 3 to 5 minutes.
- Finally, mix the toasted pine nuts into the beef and rice mixture before serving.
