  • Egg (4 large)
  • Tomato Sauce (3 tablespoons)
  • Feta (1/2 cup)
  • Spinach (1 cup)
  • Olive Oil (1 tablespoon)
  • Shallots (1 chopped)
  • Garlic (1 clove, peeled and crushed)
  • Celery (1 stalk)
  • Red Pepper (1/2, chopped)
  • Ground Cumin (1 teaspoon)
  • Salt (1/2 teaspoon)
  • Black Pepper (1/2 teaspoon)

Instructions

  1. In a skillet, heat olive oil over medium-high heat.
  2. Add chopped shallots, crushed garlic, celery, and red pepper. Sauté for about 5 minutes until softened.
  3. Stir in ground cumin, salt, and black pepper, followed by tomato sauce. Let it simmer for another 7 minutes.
  4. Carefully crack in eggs, cover the pan, and cook for about 8 minutes until the eggs are set. Finally, add fresh spinach and feta cheese just before serving.
  5. Serve warm with fresh bread on the side.
