- Red Pepper (1/2, chopped)
- Ground Cumin (1 teaspoon)
- Salt (1/2 teaspoon)
- Black Pepper (1/2 teaspoon)

- In a skillet, heat olive oil over medium-high heat.
- Add chopped shallots, crushed garlic, celery, and red pepper. Sauté for about 5 minutes until softened.
- Stir in ground cumin, salt, and black pepper, followed by tomato sauce. Let it simmer for another 7 minutes.
- Carefully crack in eggs, cover the pan, and cook for about 8 minutes until the eggs are set. Finally, add fresh spinach and feta cheese just before serving.
- Serve warm with fresh bread on the side.
